Papad Curry

Ingredients:
  • 4-5 Richbite papads
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • A pinch of asafoetida (hing)
  • 1 medium-sized onion, finely chopped
  • 1 medium-sized tomato, finely chopped
  • 1 teaspoon ginger-garlic paste
  • 2-3 green chillies, slit
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chilli powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1 cup yogurt (curd), whisked
  • 2 cups water
  • Salt to taste
  • Fresh coriander leaves, finely chopped, for garnish
Instructions:
Prepare the Papads:

Break the papads into medium-sized pieces and set aside. You can either roast them on an open flame or microwave them until crisp.

Cook the Masala:
  • Heat oil in a pan over medium heat. Add the cumin seeds, mustard seeds, and asafoetida. Let them splutter.
  • Add the chopped onion and sauté until golden brown.
  • Add the ginger-garlic paste and green chillies. Sauté for another minute.
  • Add the chopped tomato and cook until it becomes soft and the oil starts to separate.
  • Add the turmeric powder, red chilli powder, and coriander powder. Mix well and cook for a minute.
Add Yogurt and Water:
  • Lower the heat and add the whisked yogurt, stirring continuously to prevent it from curdling.
  • Add water and bring the mixture to a boil.
Cook the Papads:
  • Once the curry starts boiling, add the broken papad pieces. Stir well.
  • Add salt to taste and let the curry simmer for 5-7 minutes until the papads are soft and have absorbed the flavours.
Finish and Garnish:
  • Add garam masala and mix well.
  • Garnish with freshly chopped coriander leaves.

Serve:

Serve hot with steamed rice or chapati.
