
Papad Curry
Ingredients:
Prepare the Papads:
- 4-5 Richbite papads
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- A pinch of asafoetida (hing)
- 1 medium-sized onion, finely chopped
- 1 medium-sized tomato, finely chopped
- 1 teaspoon ginger-garlic paste
- 2-3 green chillies, slit
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chilli powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- 1 cup yogurt (curd), whisked
- 2 cups water
- Salt to taste
- Fresh coriander leaves, finely chopped, for garnish
Prepare the Papads:
Break the papads into medium-sized pieces and set aside. You can either roast them on an open flame or microwave them until crisp.
Cook the Masala:- Heat oil in a pan over medium heat. Add the cumin seeds, mustard seeds, and asafoetida. Let them splutter.
- Add the chopped onion and sauté until golden brown.
- Add the ginger-garlic paste and green chillies. Sauté for another minute.
- Add the chopped tomato and cook until it becomes soft and the oil starts to separate.
- Add the turmeric powder, red chilli powder, and coriander powder. Mix well and cook for a minute.
- Lower the heat and add the whisked yogurt, stirring continuously to prevent it from curdling.
- Add water and bring the mixture to a boil.
- Once the curry starts boiling, add the broken papad pieces. Stir well.
- Add salt to taste and let the curry simmer for 5-7 minutes until the papads are soft and have absorbed the flavours.
- Add garam masala and mix well.
- Garnish with freshly chopped coriander leaves.
Serve:
Serve hot with steamed rice or chapati.
